Cooking With Barbara Cox: Elite Summer Recipes

Summer time – a season to enjoy the outdoors at its fullest, a time to share special moments with loved ones and feel like you’re living your best life!

At NewAge, we want to give all the tools to help support your body in the best possible way. Our Wellness Council Member, Barbara Cox, has shared five delicious summer recipes using one of our Nutrifii products: Elite is here to unleash the most radiant version of yourself! Check them out:

Frozen Yoghurt Bark

Ingredients

·       400 g coconut yoghurt 

·       2 sticks of Elite

·       2 tsp vanilla bean puree or extract 

·       20 g desiccated coconut 

·       75 g fresh or frozen mixed berries (blueberries, blackberries, raspberries, strawberries)

·       50 g chopped nuts (macadamia, pistachio, almonds)

How to Make it

1.     Mix together the yoghurt, Elite, vanilla and desiccated coconut.

2.     Line a baking tray with baking parchment. Spread the yoghurt mix on to the paper, to a thickness of about 1 cm.

3.     Stud with the berries and nuts.

4.     Cover the baking tray with foil and put into the freezer until firm, for about 4-6 hours. Break into shards and store in a labelled resealable freezer bag.

5.     To serve, put the shards in the fridge to defrost and soften for just a couple of minutes before serving*.

*If left out of the freezer for more than ten minutes, the bark will melt.

Simple Elite Ice Cubes

Ingredients

·       200 ml water

·       2 sticks of Elite

How to Make it

1.     Mix the water and Elite together*

2.     Pour into ice cube trays

3.     Freeze overnight

4.     Add ice cubes to cold water and make a refreshing drink

*Normally you mix Elite with 473ml of water, but we’re making it concentrated in the ice cubes as you’ll be adding them to water, which will dilute when it melts.

Strawberry & Elite Cream Ice Lolly

Ingredients

·       200 ml coconut yoghurt

·       1 stick of Elite

·       12 whole fresh strawberries (in slices)

How to Make it

1.     Mix the yoghurt and Elite together

2.     Add the strawberries into the ice lolly moulds

3.     Pour in the yoghurt

4.     Freeze for at least 5 hours

5.     Remove the ice lollies*

*If you find it hard to run some lukewarm water on the outside of the moulds and you’ll be able to get them out slightly more easily.

Berry Delicious Elite Ice Cream

Ingredients

·       400 ml (1 can) chilled Thai coconut milk

·       30 g coconut sugar or xylitol

·       2 sticks of Elite

·       1 tsp vanilla extract

·       300 g frozen berries (e.g.: cherries, blackberries, raspberries or blueberries)

How to Make it

1.     Place the coconut milk*, Elite, sugar/xylitol and vanilla in a blender. Blend until combined, for about 30 seconds.

2.     Add the frozen berries and blend until smooth and thick.

3.     Place in freezer-proof container and freeze until solid for at least 2 hours

4.     Scoop into bowls, serve and enjoy!

*Place the cans of coconut milk in the fridge the night before or a few hours before making the ice cream. If you don’t have chilled coconut milk, you can always place the ice cream mixture in the fridge for 30 minutes before churning up the ice cream.

Elite Blueberry Sorbet

Ingredients

·       2 cups (473 ml) water

·       1 stick of Elite

·       1 1/2 cups (355 ml) non-dairy milk (e.g.: oat, rice, almond)

·       50 g blueberries

·       1 tsp of Pink Pitaya Superfood powder (optional)

·       1 tbsp orange zest (finely grated)

·       1 tbsp lemon juice

·       1 tsp vanilla extract 

How to Make It

1. Gather all the ingredients.

2. Add Elite, water, coconut milk, blueberries, pink pitaya (optional), orange zest, lemon juice and vanilla into a blender and process until combined. Place in the fridge for 1 hour until cold. 

3. Pour the mixture into an ice cream machine and follow the manufacturer’s instructions or, place the mixture into a dish and freeze

4. Soft serve consistency should take 15 to 20 minutes in the ice cream maker. If you prefer, you can place the churned sorbet in the freezer for 3 hours for it to harden a bit more.

5. Store in the freezer in an airtight container.
